New Restaurant Opens At Coyote Springs

A new bar and grill-style restaurant has opened just a stone’s throw from the Moapa community. The all-new Mitch’s Bar and Grill is now open and in business at the Coyote Springs Golf Course clubhouse just over the hill from Warm Springs at the junction of State Highway 168 and US Route 93.

The world renown Coyote Springs Golf course has been open since 2008. The Jack Nicklaus Signature-designed course is widely considered a must-play course and was rated in 2011 by Golf Digest as one of the Top 100 Greatest Public Courses.

But up until now, the Coyote Springs Clubhouse has lacked a commercial kitchen. The staff has had to order catered food and sandwiches from commercial establishments in Las Vegas in order to meet the needs of golfers.

But with the recent opening of Mitch’s, Coyote Springs staff members look forward to providing full service to golfers as well as a great desination for local who want to go get a bite to eat during the day.
The restaurant serves up a delicious array of great sandwiches and lunchtime specials with locally-inspired names. The Pahranagat sandwich features ham and pepper jack cheese on Texas Toast. The Meadow Valley Range sandwich gives the choice of turkey, ham or tuna with lettuce, tomato, pickle and onion.

The restaurant also serves up great breakfast items. These include the Southwest Breakfast sandwich with a choice of bacon, sausage or ham with eggs and cheese on Texas toast. The Coyote Breakfast Burrito is a big favorite, with a choice of bacon, sausage or ham with eggs and cheese in a flour tortilla.
From the bar, diners have the choice of an array of fountain drinks, juice or coffee – as well as draft beer on tap and a variety of mixed drinks.

Coming soon, Coyote Springs staff hopes to have a full outdoor grill in operation so that they can serve up a variety of delicious hamburgers and other grilled specialties, made to order.
The restaurant even serves up a signature hot dog with everything called “The Mitch”.

Mitch is a legendary Yellow Heeler dog who has long made the golf course his home. In 2008, the young puppy, which had been abandoned in the desert, wandered onto the golf course property. The Coyote Springs staff nursed him back to health. Ever since then, the dog has stood watch over the property. Many a night-time beast has reportedly tried to make the golf course its home territory and failed because of Mitch.

The primary purpose of the restaurant is to make the golfing at Coyote Springs even more unique, said Coyote Springs Chief Operating Officer Emilia Cargill.
“We are always looking for ways to better serve our customers,” she said. “We want to make it as easy as possible for golfers to have a world-class experience.”
Cargill explained that the golf course now even has a new mobile phone app. Golfers out on the course can submit their orders for food from the restaurant. The app then tracks their GPS coordinates as they golf. When the food is ready, golf course staff can deliver it straight to the golfers’ location.

But Cargill emphasized that the restaurant was not just for the golfers. Anyone is welcome to visit the Coyote Springs clubhouse, golf store and Mitch’s Grill, she said.
“We have a lot of people who are just travelling through that stop in for a pit stop and see what we have here,” Cargill said. “Anyone is welcome.

Mitch’s also offers an intimate indoor dining area that can handle about 50 people. There is also outdoor seating as well as a new picnic area where food can be served.
“It is a nice destination to take a little trip and get away for a while,” Cargill said.
The restaurant hours of operations are dependent upon golfing schedules; but it is normally open 7 days a week from around 7 am to about 6 pm.

Coyote Springs also touts itself as a great recreational opportunity for locals during the summer months. With special Nevada resident discounts, a round of golf can cost as low as $39 during the week and $42 on the weekend. Prices vary dependent on schedule and time of day.
