Highlights From The Class Of ‘08

MVHS Senior, Simone Costa will be studying Hospitality and Management next year.

Simone Costa will be graduating in a few weeks from Moapa Valley High School where she has been actively involved with the Pro Start or Culinary team, under the direction of Mary Bullock.

This year the team took first place in state and placed sixth in National competition. Simone said she has enjoyed her time at Moapa Valley High School and is excited to take the next step. In this case that step is UNLV where Simone plans on majoring in Hospitality and Management.

Simone is one of only four people chosen each year to receive the Epicurean scholarship worth $40,000. She said she is thrilled and honored and has big plans for her future. Simone said she has been lucky because of the diversity of her family the food is also diverse, she said that is in part where her love for food comes from.

Her long term goal is to open her own restaurant being involved in both the food and business aspects. Simone said she would like to thank Mary Bullock and her chef mentor, Chef Christopher Lindsay for all of their time and help in achieving her college goals. Simone would also like to thank her family for all of their support over the years. Simone is the daughter of Joelann and James Costa of Overton.

Houston T. Costa is one young man that doesn’t lack motivation. He is presently a senior at Moapa Valley High School where he has been active in both academics and athletics. He will be leaving his home in Overton this August for Malibu, California to attend the School of Law at Pepperdine University.

Houston said he had heard of the University and thought it would be an amazing school to attend simply because of its location. Pepperdine University overlooks the Pacific Ocean in Malibu. Houston said he applied just for fun never dreaming that he would be accepted. Much to his surprise not only was he accepted he was offered $39,000 in grant money.

Houston said he plans on majoring in Law/ Linguistics. He said he hopes to someday translate for the United Nations or work as an International business consultant.

MVHS Senior, Simone Costa will be attending Pepperdine University in the fall.
Houston said he wanted to thank Stephanie Howard for her guidance and his family for always supporting him, especially his parents. Houston is the son of Joelann and James Costa of Overton.
